Quick Muffins
A muffin can be that healthy snack that virtually everybody loves. For one, muffins are really scrumptious! I mean who wouldn’t be excited about a snack break of muffins with hot chocolate or ice cream? I would be and the girls of the pearl club certainly were. The girls were quite exhilarated at the idea of making their very own homemade muffins.

“The thought of doing the baking even without the active supervision of their coordinators as would have been the case at the center, was a thrill for the girls. Some of them went as far as improvising at it:cups for bean pudding were used in place of muffin pans; plain paper was substituted for baking cup; normal beverage replaced cocoa powder and so on”
A list of the ingredients for chocolate muffins was sent out to the girls via whatsApp. The ingredients were the following:
• 1 teaspoon baking powder
• ¾ cup sugar
• ½ cup of vegetable oil
• 1 large egg (lightly beaten)
• ½ cup milk ( ½ cup of milk mixed with ½ cup of water)
• ¾ cup lightly crushed groundnuts
• Half cup cocoa powder
• Self-raising flour
An instructive video was also sent along with an easy to follow recipe:
The girls preheated their ovens to moderate temperature and lightly greased some muffin pans. They sifted the self-raising flour, cocoa powder and baking powder in a large bowl and stirred in the sugar. Then they combined oil, egg and milk and folded in flour mixing gently and taking care not to over mix.
The mixture was poured into prepared muffin pans with vegetable oil sprinkled on top. Finally this was allowed to bake for 20-25 minutes, checking with a clean toothpick or skewer.
The girls were thoroughly pleased with themselves and at the resultant chocolate muffins. While very few of the muffins didn’t come out as expected, there was not a thing as a dismal flop.
The coordinator remarks:
“The girls and their parents were really pleased with the muffins that they eagerly shared the pictures with the coordinators. For one or two however, whose did not come out as expected, their parents say that they are not dismayed, and that they have taken note of their mistakes and are more anticipant of a better outcome in subsequent muffin-makings.”
It was definitely worth their while. One thing the girls learnt is that they can treat their friends and family to mouth watering chocolate muffins with not more than determination and a good recipe. As you now see; even with the lockdown, there is no stopping us. The fun continues at pearl club online!
